February Recipe: Roasted Edamame “Spoons”

Makes 3 cups

1lb — frozen (or fresh) shelled edamame
1T — olive oil
1/2T — sea salt
1/8T — black pepper
2T — lite soy (optional)

  1. Preheat conventional oven to 350°
  2. Toss edamame with oil, salt, & pepper
  3. Coat baking sheet with cooking spray, spread edamame in single layer
  4. Bake at 350° for 45 minutes to 1 hour, stirring beans every 30 minutes
  5. Drizzle with lite soy, if desired
